Cole Slaw - Memphis Style

On top or to the side - no barbecue is complete without it!


Cole Slaw – Memphis Style
 
2 large carrots                                                                               grated
1 small – medium white cabbage                                                  diced fine
2 green onions                                                                               chopped (the white and green parts)  
2 T. chives                                                                                     fine
 



 
Mix together in a large bowl.
 
½ cup of mayonnaise *
1 T. sugar
2 T. white balsamic Vinegar
1 T. thony mustard                                                                       
1 t. salt
1 t. freshly ground pepper
2 – 3 T. buttermilk
 
Whisk together.  Pour over the cabbage mixture.  Cover and chill until serving time.
 
Serves 6-8
 
*To make a lighter version, substitute ½ of the mayo with low fat natural yogurt.
